In Japan, October marks the prime season for Anago (conger eel), a delicacy cherished for its tender, mildly sweet flesh. As the waters cool in autumn, Anago reach their peak in flavor and texture, making October the perfect time to enjoy them fresh. Whether grilled, or served as sushi, Anago caught during this season offers a rich, buttery taste that’s deeply satisfying yet light.

🍣 Anago Handroll ($20)
Grilled conger eel glazed with smoked tare, rich and smoky with a clean finish. Finished with bursts of ikura, a dusting of cacao nibs for depth, and a touch of sansho pepper for that tingling citrus heat.  

🥢 Anago Izakaya ($24)
Grilled Anago layered over a smooth miso velouté — savoury, rich, and deeply aromatic. Finished with kinome flower for a clean, herbal lift - a bold way to kick-start a proper handroll feast.
